Kudzu is an herb used in Chinese medicine to treat alcoholism, heart disease, menopausal symptoms, diabetes, fever, the common cold, and neck or eye pain. It is sometimes used in combination with other herbs. Lab studies suggest that kudzu has anti-inflammatory and neuroprotective properties
Many people also enjoy sautéing the young leaves, shoots and flowers as a vegetable. Kudzu Root Powder can be used as a starch for people who do not digest grains well, too.
This is raw Kudzu Root and, while naturally high in starch, has not been treated to increase its ability to thicken soups, sauces, etc. or remove the naturally bitter flavor as some other products on the market have.
